A pudding unique to Suffolk
The Ipswich Almond Pudding is made with cream, eggs, ground almonds, sugar and breadcrumbs, with a few drops of rosewater added in just before cooking. The recipe first appeared around the 1740s and is occasionally found in old cookery books. However, the true proportions of each ingredient were a closely guarded secret within families and no definitive version exists.
