If the onset of winter is getting you down, you could bring some Midde Eastern warmth into your life with a visit to Maroque at Needham Market.

Lemon and Thyme Punch

3cm of fresh ginger, peeled and chopped

5tsp of sugar

Juice of a large lemon

250ml of gin

6 large sprigs of fresh thyme, roughly chopped

650ml of traditional cloudy lemonade

Muddle, or mash the ginger and sugar together – this is easiest with a pestle and mortar. Tip into a jug large enough for the finished punch. Add the lemon juice and gin followed by the chopped thyme. Top up with cloudy lemonade and chill well. Add ice and serve. Makes about 1 litre.
